Ricotta-Chocolate Omelette Roll-up

2     eggs     2  
2 tbsp     each water and sugar     30 mL
1 tbsp     all-purpose flour     15 mL
1/4 cup     light ricotta cheese     50 mL
1/2 tsp     grated orange rind     2 mL
2 tbsp     semi-sweet chocolate chips     30 mL
    Cooking spray      
1 tsp     melted chocolate (optional)     5 mL
In bowl, whisk together eggs, water, sugar and flour; set aside.

In microwaveable bowl, combine ricotta cheese, grated orange rind and chocolate chips.

Microwave on MEDIUM (50% power) for 50 seconds; set aside.

Spray 10-inch (25 cm) nonstick skillet with cooking spray. Heat skillet over medium-high heat.

Pour in egg mixture. As mixture sets at the edges, with spatula, gently lift cooked portion to allow uncooked egg to flow underneath. Cook until bottom and top are set.

Slide onto a warm plate. Spread ricotta cheese mixture on omelette.

Roll up omelette. Drizzle with melted chocolate, if desired. Cut diagonally in half.
